Papain


    Papain is pure natural biological enzymes extracted from unripe papaya fruit using biotechnology, it is composed of 212 amino acids with a molecular weight 21000 and belongs to the endopeptidase containing thiol (-SH). It has activity of protease and esterase, it has broader specificity and has strong enzymolysis ability to plant and animal proteins, peptides, esters and amides, while it also has the ability of synthesis, it can re-synthesize the protein hydrolyzate to protein substances, this ability can be used to improve the nutritional value or functional properties of plant and animal protein.

    1.
